Steak Temps

  1. Rare: 120-130°F (49-54°C) The steak will have a cool red center and be very tender. The exterior will be seared.

  2. Medium Rare: 130-135°F (54-57°C) The steak will have a warm red center and a slightly firmer texture than rare. It will have a good amount of juiciness.

  3. Medium: 135-145°F (57-63°C) The steak will have a pink center and a firmer texture. It will still retain some juiciness.

  4. Medium Well: 145-155°F (63-68°C) The steak will have a slightly pink center but will be mostly gray. It will have a firmer texture and less juiciness.

  5. Well Done: 155°F (68°C) and above The steak will be uniformly gray throughout, with no pinkness. It will be very firm and have the least amount of juiciness.
